I love egg mcmuffins! Yes I said it! I’m a Mickey D’s fan, although it has been a while since I have had McDonald’s I still love it. Does anyone remember the McGriddle? I have no clue if they still sell them(I told you it has been a while). They were pancakes shaped like english muffins filled with syrup; they had sausage, egg and cheese; just like the egg mcmuffins. Oh gosh those were my favorite (my greedy moment would have to be the time I ate about five in one sitting)!!! I still crave McDonalds from time to time but I usually like to make my own. Why buy it! When you can make it!
This version is a bit healthier and has less salt! Yes a healthy breakfast sandwich with pork!! Prosciutto is only 60 calories for two slices and 3 grams of fat! I know your lips are watering so yes go buy some prosciutto and thank me later!! It tastes similar to bacon (although it ‘s ham) can be a bit pricey but it’s so worth it.
This was a pretty easy recipe the only thing that can be frustrating is making your eggs round; especially if you do not have an egg ring. I did a few variations one with an old cookie cutter and another using a muffin tin. My favorite would defiantly half to be the cookie cutter. Once you place the cookie cutter in the skillet with boiling water some of the egg white will float out of the cookie cutter. With the muffin tin I had to use oil (which added more calories) in the bottom of the tin so the egg would not stick (when I baked them). When I puncture the egg yolk with a wooden skewer there was a yellow crust from the egg (as shown in the picture) on top of the muffin unlike when I did it with the cookie cutter. I heard that a tuna can will work when making the eggs round but I have not tried it yet.
I like to layer my Crispy Prosciutto Avocado Egg McMuffins in many different ways; usually I like to layer them so I can get the most flavor. I like to put a few avocado slices on on the english muffin top and bottom, then I layer the prosciutto and eggs. Another variation is to place the prosciutto on a english muffin while warm wait a few minutes ( so the juices can soak in to the english muffin) layer your toppings and dig in. I love when eating healthy tastes this good..
Crispy Prosciutto Avocado Egg McMuffins Recipe:
- 4 English muffins
- ½ -1 cup water ( for each egg)
- 4 eggs
- 4 prosciutto slices
- 2 medium avocados
- Pinch of salt (for each egg)
Recipe Directions: Preheat oven to 350 degrees; place prosciutto slices on foil and place in the oven. Let bake for 5-10 minutes are until the edges curl (you don’t want your prosciutto too crispy). Toast english muffins and set aside.
Turn the stove on medium to low heat and place cookie cutter into a skillet filled with 1/2 cup of water adding more if needed. Place egg into cookie cutter and let boil add a pinch of salt; take a wooden skewer and puncture the yolk.Cover the egg with a lid and allow the egg to boil. It will take about 5-10 minutes. Once done take out the skillet assemble your breakfast sandwich and enjoy.
